Everyone says its good to take time for yourself, but when do we think to. So since leaving my employed job at the salon, I have taken a few moments in life that I never really normally would. With my boyfriend being away on a regular basis I alway enjoy and make the most of our time together. But the last two weekends we have done some different things for a change. There is honesty nothing better than spending that quality time together doing the things you love.....
Baking....
One of my long time loves. This is one thing where I can really loose myself, so doing it with my boyfriend was perfect. It was a Sunday and we were at his family home. I had driven over to his and on my way picked up all the supplies we needed. When I got there we got straight into making the coffee and walnut cake we had planned on. With every baking experience you always have disasters. Old ingredients, not enough ingredients and quick dashes to the local shop. Which let me tell you I think spent more time in the local shop than the kitchen. But we managed it. While our perfect looking cake cooled we set to the task of making London Cheesecakes. Now Michael introduced me to these, it was love at first sight. They are just incredible. So you have a piece of puff pastry (ready roll because who has time to make their own) this is then cut into 12 squares. On 6 of these you put a layer of jam and then a blob of frangipane. You then add another layer of pastry to all 6 and then bake in the oven. Once they had cooled we added the icing and the coconut. One sweet treat this girl can not refuse. Then we made the coffee icing and covered the inside and top of cake. Making all our sweet treats finished. I loved doing this because its something you can enjoy alone or together.
Lunch with friends....
This is something I never do. But the weekend just gone my friends from Essex came to Norfolk for the weekend. So when they asked if we wanted to join them for lunch, we jumped at the opportunity. So Sunday saw a chilled morning with a fry up with my family. Then off to Norwich to Bella Italia for a spot of lunch. My friends beat us there and was all seated when we got in. But having said this we had the perfect lunch and caught up on so much. It really made me realise that in life you need to take these small opportunities to do the things you love.
So what I have learnt in my new journey is...
Do the things you love no matter what they are or how small they are.
