Homemade rhubarb compote recipe

Hi everyone,
Hope you are all ok. Here is how I make my homemade rhubarb compote.
Ingredients:
- 6 cups of rhubarb
- 1/2 cup of water
- 1/2 cup of granulated sugar

 

Method:
1. Start by washing your rhubarb and then cutting it into chunks using either kitchen scissors or a sharp knife.

2. Place six cups of chunks of rhubarb into a medium sized pan.


3. Next add the 1/2 cup of water to the pan along with the 1/2 cup of sugar.


4. Place your pan on the hob over a medium heat. Stir regularly until the water is boiling and the sugar has dissolved. Be careful not to burn your sugar or let the rhubarb stick. 


5. Once the sugar has dissolved and the mixture is boiling away. Place the lid on the pan and leave to simmer for 5 minutes.


6. Once the 5 minutes are up uncover your pan. Give your mixture a good stir and leave to cook for a further 5 minutes. This time leave it uncovered.
7. Once the 5 minutes are up give the mixture a really good stir and leave to cool slightly.

 8. Once it has cooled slightly transfer the mixture from the pan to a container. Then leave this to cool fully. Once it has cooled down place it into the fridge.

9. Last step is to just enjoy eating it. I personally take mine to work with yogurt.
